About

My name is Amanda and I love everything about food. I became interested in blogging during my summer internship with K-State Research and Extension, Nutrition Education Programs. During the internship, I posted to the state nutrition blog, "Nutrition Bites" which has since been dismantled. During the internship, I decided to create my own blog to share the nutrition tips and tricks I was learning with others. I took a hiatus during my time as a graduate student at the University of Illinois at Urbana-Champaign where I completed my dietetic internship and masters with a thesis focusing on the effects of peer nutrition education on culinary-skills outcomes in middle-school students.

I moved to Florida with my then boyfriend (now husband) and began working as a dietitian and supervisor at the Florida Department of Health with WIC. I have recently transitioned into a role as a renal dietitian at a large teaching hospital.



This is an account of my learning experiences and nutritional insight from courses, clients, and life experiences. I believe that living a healthy lifestyle is full of new learning experiences and enjoying the obstacles of life. The name Chasing That Apple initially came from the idea that so many individuals are in search of better health. I hope you find the nuggets of knowledge shared here to be helpful in providing a new perspective on nutrition and health.
