Breakfast Fuel!

While many know breakfast is the most important meal of the day, making a healthy breakfast is a whole different story. Personally, I don't care for fruits and vegetables in the morning, must be a texture thing. In addition, eggs upset my stomach, so those are out. My alternative chocolate chip pancakes, yes that's right!

My chocolate chip pancakes are fiber rich and contain some whole grain. How do I do this and still have great tasting pancakes?  OATMEAL! I simply add a small amount (~2-3 tablespoons for 2 pancakes) when mixing the batter. The pancakes then are a bit taller which allows the mini chocolate chips to go to the middle of the pancake and not burn the griddle. Mini chocolate chips allows the pancakes to be sweet without having a lot of chocolate (cutting down on the sugar). I enjoy my pancakes with a small amount of peanut butter and a glass of low fat milk!
